Description
The CL 16P is a purpose-built fillet knife designed for clean, precise cuts when preparing fish or trimming delicate cuts of meat. Its 160mm blade is forged from AISI 420C stainless steel, hardened to HRC 55-57 and finished with a satin coating for a classic look and reliable corrosion resistance in wet, food-preparation environments.
At just 1mm thick, the blade has the flex needed to follow the contours of a fillet closely, helping to minimize waste and produce clean, even cuts. The handle combines polypropylene (PP) and TPR for a lightweight yet secure, non-slip grip, even when hands are wet, and the knife weighs only 140g for extended, fatigue-free use.
Made in Italy, the CL 16P comes with a polypropylene sheath for safe storage and transport.
