How do you sharpen Shun Knives?
To sharpen Shun Knives, a whetstone should be used. After wetting your whetstone slightly, grind the knife with a 15-degree angle to the whetstone if it has a double bevel blade and a 45-degree angle if it has a single bevel blade. Continuously move the blade towards and away from your body with light pressure until you feel a burr forming. Then, turn the knife over and repeat on the other side. Repeat this process along the blade.
How do you remove the burr after sharpening Shun Knives?
The burr formed on Shun knives can be removed using newspaper. Hold the knife at the same angle used on the whetstone and swipe the blade left and right on the newspaper until the burr is removed.
